Sweet Potato Fries and Creamy Avocado Dip
I personally love fries and ketchup on weekends, as a treat. However, white potatoes which are commonly used for fries are higher in starch than sweet potatoes, they also take longer for your body to digest them due to their sticky consistency. Ketchup, as many of you know is extremely high in sugar and preservatives. Therefore, here is my twist on fries and ketchup.
Benefits of Sweet Potatoes:
Sweet potatoes are packed with nutritional goodness! They are high in Vitamin A – a fat soluble, which is important for immune function, vision and several other vital functions in our bodies.
Benefits of Avocado:
Avocado, is loaded with nutritional benefits which is great for substituting into your favorite recipes. For woman specifically, they contain high amounts of vitamin B6; an important vitamin to prevent conditions such as anemia. Low levels of vitamin B6 has also been shown to be linked to chronic inflammation. Avocadoes as you all know are high in monounsaturated oleic acid, which is a “heart healthy” fatty acid.
Ingredients for Sweet Potato Fries: 1 large sweet potato, cut into wedges
1 tablespoons of olive oil
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
Ingredients for Avocado Dip:
1/2 cup plain Greek yogurt 1 large avocado
1 lime squeezed 1/2 teaspoon sea salt
Directions: Sweet Potato Fries:
- Preheat oven to 425ºF.
- Place cut sweet potatoes into a bowl and drizzle olive oil.
- Next, add garlic powder and cayenne pepper to the mix. Make sure every wedge is evenly coated.
- Place wedges into the oven for 30 min and flip once.
Directions: Avocado Dip
- Place cubed/peeled avocado in blender
- Add Greek yogurt and lime juice – Blend
- Add sea salt for taste
