Quinoa Green Power Salad
Quinoa is a diverse ingredient which is incredibly nutritious. It is high in protein compared to most plant foods and contains all the essential amino acids that we need. In other words, quinoa would be a great post-workout meal! As it also contains high amounts of calcium, magnesium, zinc and potassium.

1 cup black quinoa or regular quinoa
2 cups water
1 3/4 cups cooked edamame
2 ripe avocados chopped in cubes
1 cup finely chopped kale
1 tablespoon lime juice
1/4 tsp pepper
1. First, bring 2 cups of water to boil. Rinse the quinoa. Once, water has boiled turn the heat to low and add quinoa to cook for about 15 minutes, or until water is absorbed. Remove from heat and set aside to cool.
2. While the quinoa is cooling, make the dressing. In a small bowl, lime juice, and sea salt and pepper.
3. In a large bowl, combine quinoa, edamame, cucumber, avocado and kale. Gently stir. Pour the dressing over the quinoa salad and stir to combine.
4. Serve at room temperature or chilled.
