Egg Salad Wrap
This wrap is packed with good fats, great nutrients and high protein to ensure satiety and maintain blood sugar levels.
Eggs yolks are a great source of vitamin D, which is the sunshine vitamin, and egg whites are 100% pure protein, which make eggs a complete power food. They are also really tasty, enjoy!
2 Hard boiled eggs
1 Tsp. light mayonnaise
½ Tsp. mustard
1 Celery stalk, diced
¼ Cup carrots, diced
2 Romaine lettuce leaves
1 Cup cherry tomatoes
1 Cup cucumber, sliced
1 Whole wheat tortilla
Paprika, salt and pepper to taste
- Chop hard boiled eggs and add all ingredients into a bowl except for lettuce, cherry tomatoes and cucumber.
- Place lettuce on the wrap and add egg salad on top.
- Serve with cucumber sticks and cherry tomatoes on the side.
